We avoid the use of unhealthy inclusion of oils and sugars in line with our dedication to your health and utmost quality. 

Here is how you can tailor your dough to your taste preference: 

  • Flour: We offer Italian 00 flour. You can choose between Caputo or Le 5 Stagioni brands.
  • Hydration: Based on your taste preference, we provide choices of water content at 60%, 65%, 68%, and 70%.
  • Dough Starter: You have the freedom to choose between Biga or Poolish dough starter, giving your dough increased depth.
  • Yeast: All dough is made with fresh yeast from the French brand I’hirondelle.
  • Fermentation: Each piece of dough undergoes a low-temperature fermentation for 24 hours for the best texture and aroma.

  • Dough Weight: Each of our pizza doughs has a standard weight of 280 grams, in line with Neapolitan standards.
  • Packaging: Each dough is individually packaged to maximize freshness and ensure quality.
  • Shelf life: The optimal use of our dough is within 72 hours, but it can be safely stored for a longer time if necessary.
  • Freezing and Thawing: If you need to store the dough for a longer period, it can be frozen. Please transfer the dough from the freezer to the refrigerator 24 hours before use and let it stand at room temperature for 2 hours before making it for the best taste.
